Basil, garlic, cheese, and tomatoes are classic combinations. Pine nuts round out the flavor well, through the first of those ingredients are the staples of most genovese pestos. For a simple and delicious vegetarian pasta, cook the pasta of your choice, drain, stir in pesto, pine nuts, and a bit of olive oil and/or pasta cooking water if too dry and your tomatoes aren't very juicy. Add diced fresh tomatoes and toss lightly. Serve with freshly grated parmesan.



You can also deconstruct this dish to use the ingredients straight, rather than in pesto: toss pasta with olive oil, shredded basil, crushed garlic, toasted pine nuts, salt, pepper, grated parmesan, and diced tomatoes. Summer pasta can't get much better!

Cook pasta. Drain.



In a large bowl, combine pesto, garlic, pine nuts, and tomatoes. Mix well.



Put pasta on a large serving dish and make a well in the center. Put pesto mixture in the pasta well. Garnish with grated carrots and parmesan cheese.

I dont have the exact ingredients but do make this at home. Boil your pasta and keep aside. Heat a little olive oil, throw in 2 chopped garlic, one chopped onion, bay leaf, chopped tomato, chopped green chillies, mushrooms, olives (optional), toasted pine nuts. Then your pesto sauce which more or less already has tomatoes etc. Add your pasta and mix well. Lastly add some shredded cheese if you wish.

My pesto is basically garlic, pine nuts, and basil with olive oil.



I'd use pesto with bits of sun-dried tomatoes and grated carrots.

yeah, you just said all the ingredients already. ... just add olive oil... feta cheese is a great addition too
