Vegetarians can consume dairy and eggs; it's vegans who don't consume these. Vegetarians (and vegans) also avoid gelatin, rennet in cheese (it's made from the fourth stomachs of veal calves), and in some cases, carmine in food and cosmetics (a red coloring made from crushed beetles).

If you avoid all animal foods in your diet, you would be a "strict vegetarian". If you expand avoidance of animal products to your lifestyle, then you are a vegan.

As for avoiding meat around the holidays, many companies make vegan and vegetarian roasts that you can buy and heat up easily. You can also ask your family to make the sides without meat, animal-based stock, butter, etc. You can ask them to make the stuffing vegetarian and cook some of it in a casserole dish rather than in the turkey. Or you can just avoid your carnist family and find a vegetarian group to enjoy a holiday meal with.

A vegetarian is someone who does not eat animals. They may or may not choose to eat dairy and eggs.

Not eating animals includes those parts of animals that aren't readily visible in food, such as chicken stock or gelatin)

But really, I think you're going about this backwards. Why not FIRST decide what you do and don't want to eat, and THEN figure out whether the word 'vegetarian' is the correct label for your diet?

Nut roast are a good replacement for roast meats, and there are lots of good recipes online. There are also lots of good meat replacements like tofu and quorn (If you get that in the US).

Being a vegetarian doesn't mean you don't have to eat eggs and dairy. that's veganism. But if you wanted to cut them out as well that's fine. Almond, soy and rice milks to replace dairy. If normal dairy makes you feel sick though goat and sheep products are lower in lactose and are easer to digest and there are lots of nice goat and sheep cheeses out there (And goat butter is seriously the nicest butter ever!)

Its a matter of semantics, strict vegetarians don't eat meat, milk, dairy , eggs or seafood. There are other kinds of vegetarians that eat some of those things. For instance ova-vegetarians eat eggs. Pesco-vegetarians eat seafood.

But strict vegetarianism is THE way to go. and since you are already leaning towards that.

Go online and search for a free vegetarian starter kit. There are a lot. I know that PETA makes a good one. That will give you a little bit of reading to start off with.

Oh, and you should read this

This is basically a good plan but you will want to modify it to fit your needs.

First week, stop buying milk and buy some soy milk, instead. You'll need to try a few brands and kinds till you find the one you like best. Week 2 – 5: stop buying red meat, then pork, then chicken, then fish. The next step is to start avoiding dairy, like cheese and yogurt. This step is a little tough because they put milk and eggs in all kinds of baked goods. So you may need to do this step in steps too.

Sometime during the first month you should visit the library and take out some books about being vegetarian. You should get some cookbooks, too, especially, if you like to bake.

If you like podcasts check out the Compassionate Cooks site and podcasts, they are really great to listen to in the car or while working out.

If you like movies you can watch "Forks over Knives" and "Earthlings" for free online.

Oh, and at some point you should learn about tofu. It’s a pretty important component to a vegetarian diet.

You can make this as easy or as hard as you wish. But really, step-by-step and its pretty easy.

Vegetarians eat dairy and eggs, just not meat. Vegans don't eat, wear, or purchase any animal products. This includes meat, dairy, honey, eggs, and probably more. Around the holidays if you don't really care about eating healthy and you want to fit in (kinda) you could get a vegan tofu turkey thing and they make vegan meatless meats for all holidays. If you don't want all that crap in you, I'd just say eat fruits and vegetables on holidays and screw tradition!

Vegetarians can't eat dairy products. You're thinking of vegan. Before coming a "vegetarian" you should learn your terms.

Vegetarians eat eggs and dairy. It's Vegans that don't. An ingredient you need to watch out for is Gelatine.
