I am looking for some good vegan recipes for different types of cookies. Preferably ones that are simple, thanks!

Molasses Cookies

Ingredients

¼ c. dried prunes



4 tbs. hot water



¼ c. canola oil



¼ c. blackstrap molasses



2/3 c. brown sugar



1/3 c. orange juice



1 tsp. cider vinegar



2 c. unbleached white flour



2/3 c. soy protein isolate



1 tsp. cinnamon



2 tsp. ground ginger, or to taste



½ tsp. ground cloves, or to taste



1 tsp. baking powder



½ tsp. salt



Directions

Preheat oven to 350 degrees.



Combine prunes and water in blender; blend to thick paste consistency.



In medium bowl, combine prune paste, oil, molasses, sugar, orange juice and vinegar; stir until smooth. In large bowl, combine flour, soy protein, cinnamon, ginger, cloves, baking powder and salt. Sift dry ingredients gradually into wet prune mixture. Stir until well thoroughly moistened.



Drop batter by tablespoonfuls onto ungreased cookie sheet; flatten with fork. Dip fork in water if batter sticks. Bake for 8-10 minutes or until done.

Makes 2 dozen cookies



Per cookie: 160 Calories, 5 g Protein, 2 g Fat, 25 g Carbohydrate, 1 g Fiber, 130 mg Sodium

I have one of the easiest vegan chocolate chip cookie recipes ever, made with cake mix:



1 package Dr. Oetker's yellow cake mix (or similar sized vegan cake mix - Oetker's mixes are small-ish)

1 t. baking powder

1/3 c. vegetable oil

egg replacer equivalent of 2 eggs (can also use the flax seed trick)

chopped walnuts (optional)

vegan chocolate chips (I use a chunked up Endangered Species dark chocolate bar myself)



Preheat the oven to 350 degrees. In a medium bowl, stir together the cake mix and baking powder. Add egg replacer and oil and mix until blended. Add in walnuts and chocolate chips (or other yummy goodies). Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 8 to 10 minutes. Allow cookies to cool for about 10 minutes before moving to a rack for cooling.

I like the ones on this blog for chocolate chip cookies, but I buy the chips rather than making my own. If you skip the part about making the chips, this is a very easy chocolate chip cookie recipe. Follow the links down to the bottom left and you'll find more cookie recipes.

Seriously? I have hundreds of recipes,but I'm not going to put them all on here,would take too long. Some examples-chocolate chip,peppermint chocolate chip,ginger snaps,several types of peanut butter cookies,oatmeal raisin/chocolate chips,thumbprint cookies, maple walnut,hazelnut with chocolate chip shortbread cookies,biscotti of every kind,I could go one for quite awhile. Vegan baking is really easy. I've taken regular cookie recipes and turned them vegan in 2 seconds. I just use vegan butter,vegan milk,and egg replacers. Agave where honey is called for,and raw sugar instead of white sugar(white sugar is often turned through animal bone).

Here's a few easy sites you can start with. I highly advise to experiment with your regular recipes,or buy some vegan cookbooks. My favorites are La Dolce Vegan,How it all Vegan,Garden of Vegan-all by Sarah Kramer;500 recipes;Vegan Planet;Vegan with a Vengeance.

Though i dont have a recipe, there are really good vegan cookies in the Whole foods market. Probably one near you.



Chocolate chips cookies are good. the chocolate isnt made of milk, just pure cocoa and cocoa liquor and so on... they are nice and sweet. The lil chocolate chips melt in your mouth. its all good. lol
