Many breakfast cereals and mueslis are already vegan and can be eaten with nondairy milk. Oats with chopped nuts and berries is good (plain oatmeal is usually healthier than the instant flavoured kind). Toast topped with peanut butter and banana slices is also quick to make. You can buy nondairy yoghurt made from coconut, soy or almond but I don't know what it's like, although it's probably good with fruit or in smoothies. Tofu scramble is a popular vegan breakfast option because it's a good source of protein and resembles scrambled eggs.



For lunch, jacket potatoes, salads, pasta dishes and sandwiches are all easy to make vegan: peanut butter sandwiches, pasta in tomato based sauce, jacket potato with bean chili, salad with olives and vinaigrette dressing, veggies and hummus, etc. Many of the lunches that people eat are already vegan. Sometimes it just takes a little experimenting.

I love a nice, easy (if you have a good blender - haha!) green smoothie. My favorite is large handfuls of spinach, banana, frozen mango, and homemade almond milk! Yum! Sometimes I slather peanut butter or almond butter on a banana if I need a little more fat. Larabars are great for breakfast on the go!



Lunch you can get creative! I like mushrooms sautéed in garlic with kale, spinach and quinoa. Legumes make a great filled lunch item, and you can customize them however you want. I made butternut squash soup with kale and white beans. Lentils with mushrooms, carrots, onions, tomato topped with sweet potato in a faux shepard's pie. (The last one is labor intensive!) Really, you can do whatever suits your taste. Remember to get a nice hunk of some kind of fat in there to keep you satiated!

For breakfast, you could make baked oatmeal the night before and eat it in the morning with fruit or nuts.
