I'm a lacto-vegetarian in the process of becoming vegan! I'm only 16-years-old, but I've been cooking all my meals since i was around 14. I also love to cook!
I've always been fascinated with vegan diets, they are not diets! diets you can only stay on for a month! Veganism is a lifestyle! And so, I'm slowly adapting from vegetarian to vegan.
What are some awesome vegan cookbooks that have healthy recipes, that don't take hours to make?

If you want healthy vegan recipes, look for cookbooks and recipes that do not fry food in oil or use processed foods. One of my favorites is Fat Free and Easy by Jennifer Raymond. All of the books by John and Mary McDougall offer healthy recipes and good nutrition information.

My favorites are those by Isa Chandra Moskowitz and Terry Hope Romero: Vegan With a Vengeance and Veganomicon.



I also really enjoy the Uncheese Cookbook by Joanne Stepaniak, and as a fourth choice, Everyday Vegan by Jeani-Rose Atchison. These are more health-oriented than the Moskowitz-Romero books, but all those I am mentioning contain delicious recipes.

Hey Im 14 & I've cooked multiple meals out of the cookbook: "Vegan Planet" by Robin Robertson. Its a great book with lots of variety! So far I've made vegan pad thai, pesto pizza, sweet potato & black bean burritos, and more. Its lovely because it doesnt solely rely on substitutes to make a good meal, but rather variety of flavors from different plant sources!

I really like Vegan Lunch Box and Vegan Lunch Box Around the World, since I always found it easy to think of dinner to make but hard to think of lunch.

I'm sure you'd find a few great vegan cookbooks at your local library, but the internet is a really great place to find recipes as well. My personal favorite is vegweb.com and every recipe on there is vegan.
