i need some ideas on new veggy. meal i would like to hear your fav. meal or meals. and pls tell me how you fix it ..and please no rude answers ty and god bless

1 bag frozen mixed veggies, suck as carrots, broc and cauliflower

1 16 ounce container sour cream

1 8 ounce bag shredded swiss

1 can durkee onions



Thaw veggies a bit, then add the sour cream and cheese, bake at 350 for about 30 minutes, top with onions for additional 5 minutes.

Whole Wheat Pasta in Mushroom Sauce



ingredients



50 gm Shitake mushroom-soaked in warm water for 15 minutes

100 gm fresh mushroom-sliced

1 tbsp chopped onion

1 clove garlic

1 tbsp fresh thyme, or fresh parsley chopped

30 ml white wine

100 gm whole wheat pasta-penne or linguine

salt and pepper for sea



method:



Put the past in boiling salted water for the time specified on the packet



Whilst the pasta is boiling we shall prepare the sauce.



In a heavy bottomed saucepan, sauté onion and garlic in Olive oil, add mushroom and wine



Once the wine has evaporated, add some of the water in which shitake mushroom was soaked, add salt, herb and cook for 5-6 minutes



Once the pasta is cooked, add to the sauce with a little bit of pasta water, serve at once

My husband became a vegetarian, even though he eats few vegetables! LOL His favorite thing is grilled red, green, and yellow peppers served over rice or on a tortilla with soy chedder and jack cheese and imitation sour cream.



We cut the peppers in strips, like for fajitas, and then coat them in olive oil, salt, and pepper. It's so easy, fast, and so so tasty!



One time, for a pot luck, he made the grilled peppers and added strips of sweet onions. Then he wrapped them in corn tortillas with cheese. Laid them in rows in a pan. Covered with a can of enchilada sauce. Topped with more cheese and baked until the top was bubbly brown. This took maybe 30 or 40 minutes. We brought some refried black beans and salsa to go on the side. This dish was a HIT at the potluck! Everyone raved. The peppers made up for the canned enchilada sauce and no one even knew the cheese was soy cheese!

I've been a veggy for 15 years now and can't cook, but can make veggie pasta and lasagne. It's easy - I just basically cook the pasta, add a tomato sauce and put in chopped mushrooms, sweetcorn, some chopped garlic and peppers. Boring i know, but it tastes nice and you can have it cold the next day too!

Stir fry -

Broccoli,

Carrots,

Peas,

Onions,

Water,

Tomatoes (Dolmio is best)

Realeat Chicken Style pieces.

Water



Fry the onions (about 2 med/large) in oil.

Add the chicken style pieces. (1 packet)

Add Water (just enough to cover the realeat pieces)

Careful the pieces stick in no time and are bad to get off your wok.

Add the broccoli (about 1 med head)

Cover with saucepan lid.

Pre cook carrot till almost cooked.

Add carrots and peas, cover with saucepan lid.

Once simmered for about 10 mins (keep an eye on it - the chicken pieces will stick like hell - honestly).

Add dolmio and let it simmer for a few more minutes, till the vegetables are soft and the realeat pieces are cooked)

Serve with rice.



P.S the saucepan lid is important for it acts like a steamer.

I like raw eggplant with condensed balsamic vinagrette. Slice the eggplant into eye pleasing, fingerfood size slices. Cook the vinagrette on simmer until it thickens. serve with crumbled feta and walnuts.
