Good Vegetarian Recipes?

I'm 16 years old and i'm starting this New Year's Resolution: I can't eat meat. Well, almost. I can't eat any land animals. I allow myself to eat white meat chicken sometimes, because i have a muscle disease and i must eat protein. So, with all that being said, does anyone have any good vegetarian recipes that meat eaters might enjoy? I need some desperately! Also, i need tips on food i can bring for lunch at school. Thanks so much!

There are some damn good vegetarian recipes out there. Any food with meat in it can be altered to a vegetarian version.



For example, next time you go to the market, look for the companies Morningstar and Boca. They are companies that make vegetarian food. Morningstar products have green colored bags and boxes, Boca has red colored bags and boxes.



Morningstar makes chicken nuggets/tenders, sausage patties, chicken strips, chicken patties, hamburgers, cheeseburgers, sausage egg and cheese biscuits, bacon egg and cheese biscuits, bacon, crumblies (this is the vegetarian version of ground beef. Tastes amazing.)



Boca makes chicken patties, hamburgers, and crumblies.



You can use a bag of crumblies instead of a pound of ground beef and make yourself tacos with cheese! (I absolutely love vegetarian tacos)



Also, pasta is fine, rice is good, if you want flavored rice, dirty/spanish/wild rice is really good.



You can still have fish sticks/fish fillets



You can think of anything and just substitute the meat for crumblies. For sausage crumblies, just break up a sausage patty. So if you want to make a sausage and cheese Stromboli, you'd get a box of sausage patties by morningstar and cook them, then break them up until crumbles and use them in place of real sausage.

Salad of Shaved Fennel, Oranges, and Candied Pecans

Ingredient List



Serves 6



Candied Pecans



1/2 cup pecans, halved and quartered

1 Tbs. pure maple syrup

1/2 tsp. sugar

1/2 tsp. salt

1 pinch cayenne pepper





Salad



3 Tbs. olive oil

2 Tbs. white wine vinegar

2 medium fennel bulbs, halved and thinly sliced (2 1/2 cups)

2 cups baby arugula leaves

3 small Valencia oranges, peeled and thinly sliced

1 small red onion, halved and thinly sliced (3/4 cup)



Directions

1. To make Candied Pecans: Preheat oven to 400°F. Toss pecans with maple syrup in small bowl. Add sugar, salt, and cayenne; toss to coat. Spread nuts on small baking sheet, and roast 10 minutes, or until crispy and aromatic. Cool 10 minutes.



2. Meanwhile, to make Salad: Whisk together oil and vinegar in salad bowl. Toss together fennel, arugula, orange slices, and onion in large bowl. Season with salt and pepper, if desired. Add salad mixture to vinaigrette, and toss to coat. Sprinkle with Candied Pecans.
