You can make Tacos just purchase a taco kit and use Boca Crumbles in place of the meat. You can also make Sloppy Joes with Manwich Sauce and again substitute Boca Crumbles for the meat in it. You can also make angel hair pasta and heat up a jar of marinara sauce which is meatless and eat the pasta with sauce which is simple. You can make bean burritoes with canned refried beans. You can use Morningstar Farms Meal Starters which are Vegetarian and make Chicken or Steak wraps out of them with Tortillas and your fave veggies. You can make sausage subs by using Tofurkey Vegetarian Sausages and you can cook some cut up peppers and onions and put it all on a roll with mustard. You can also look for new and easy recipes at the websites for Morningstar Farms, Boca, Gardein, and Tofurkey. You can also borrow Vegetarian cookbooks from the library as well. Fresh tomato sauce. I've only ever met one person who didn't like it, even if I burned it or put in too much sugar. It’s delicious and only takes half an hour to make. If you have garlic, onions, and olive oil lying around, all you have to buy are herbs and passata. There is nothing in it that would not be good for you in the amounts that they're in. Here's the recipe: Ingredients: 2 Tbsp olive oil 2 chopped sprigs fresh rosemary 1 chopped sage leaf or 1 pinch dried sage (optional) 1/2 a chopped red onion 4-6 cloves garlic (how much do you like garlic?) 5 or 6 halved cherry tomatoes (optional) 1 liter passata or 1 can tomatoes Sugar to taste (gets rid of bitterness-about 1-2 Tbsp should be used) Salt to taste Pepper to taste 1. Simmer the onion and herbs in the olive oil until onions are soft 2. Add the garlic and simmer until onions are semi-transparent 3. Add the cherry tomatoes and passata 4. Simmer to reduce for about 15 mins. 5. Add the sugar, salt, and pepper Serve over pasta and enjoy!

One word.... Falaflles. Look up a recipe for them. They're sort of like gyros but they are made with chick peas. Yummy.



But my favorite veggetarian recipe is Thai Curry Soup. Try it...



2 ounces of rice noodles (or you can substitute with another noodle, too)

1 tbls. olive oil

1 clove of garlic, minced

just add a pinch of ground ginger

pinch of curry spices to taste

1 1/2 cups vegetable broth

soy sauce to taste

1 tblsp. sugar

1 can (13.5 ounce) coconut milk

handfull of sliced mushrooms

handfull of baby spinach leaves

2 tblsp. lime juice

sprinkling of cilantro

a bit of chopped onion



Cook the noodles according to the package, and while that's happening, bring the coconut milk to a boil on the stove. Add olive oil, garlic, ginger, curry spice, vegetable broth, soy sauce, and sugar. After that's simmered for a bit, add the veggies, and let that simmer for about 10 minutes. Add the lime juice and cilantro, and stir. If broth is too thick, you can add more broth or even some water. Then just toss the noodles in there and enjoy. Yummy vegetarian goodness. Also great if you add in a little bit of pre-cooked tofu at the end. Or some tomatoes in with the other veggies. Hope that helped.

Think of food you want to eat.

Cut out the meat.

Replace the meat with something else, like legumes or even a vegetarian meat alternative.

Tada.



That's it. There's nothing special about being vegetarian. What you need to do is change your mindset.

Thai Peanut Tofu is really good and easy to make.



Sauce-

1 can of light coconut milk

1/3 cup of peanut butter

1/2 teaspoon of basil

1/2 teaspoon of garlic powder

1/4 teaspoon of black pepper

1 teaspoon of hot sauce

1 tablespoon soy sauce



& you mix all of those together and heat it on low for about 10 minutes until it starts to simmer.[:



Tofu & Vegetables-

1 block of tofu cut into cubes

4-6 cups of veggies cut into bite-size pieces

1/2 cup of yellow or white onion cut into little pieces

2-3 tablespoons of canola or olive oil



saute the tofu and onion in the oil until the tofu is lightly browned, then add the veggies and continue to saute it all until the veggies become slightly tender.



then, add the sauce and simmer it all until the veggies are fully cooked.
