Wanted: Vegan Mexican recipes?

I am going Vegan. Problem is, that means I must quit Mexican food. Or does it?

I would like web sites and/or cookbooks that will show me how to make Vegan Mexican dishes that tastes like mom use to make.

So if you are a fan of Mexian food and vegetarian, please. Let me know.

Use veggie crumbles to replace ground beef in any recipe.



Try my salsa:



My own recipe. Use on good chips like El Milagro (sold in a paper bag) or El Ranchero. Heat the chips on foil in the oven at 200 degrees for a few minutes for warm restaurant style chips.





29 OZ. TOMATO SAUCE ( I USE HUNT'S)

½ MEDIUM ONION

3 JALAPENOS

1 BANANA PEPPERS/HUNGARIAN WAX PEPPER

1 FRESH CAYENNE PEPPER (OR DRIED)

3-5 DRIED CHILES DE ARBOL

1/2 MEDIUM RED BELL PEPPER (NO SEEDS)

2-3 CLOVES GARLIC

¾ T LEMON JUICE

½ t SALT

HANDFUL OF CILANTRO



PUT ALL INGREDIENTS IN A FOOD PROCESSOR AND RUN UNTIL FULLY CHOPPED AND BLENDED.

Black or refried beans (or any beans, yet black and refried are extra "autentic"; Even pinto) can sub for meat. that's what I do at Mexican eating places, even Taco Bell on the very uncommon events that i pass there. (i do no longer evaluate Taco Bell actual Mexican, yet Mexican wannabe.) maximum taco seasoning and sauces are vegan, as were reported; in basic terms examine the labels. The cool factor approximately Mexican is that that's versitile. My husband is a meat eater and that i'm vegan. we are able to stroll right into a Mexican eating place and are available the two come out happy.

I'm a vegan and I could live off of Mexican food. It's my favorite! Many Mexican restaurants can prepare burritos, tacos and salads without dairy products, just be sure to ask about how the foods are prepared (oils, butters, etc.). If you're on the go and have to eat cheap Mexican food (Taco Bell), there are also a few vegan options: Bean Burrito (minus cheese), Taco Salad (minus meat, cheese and sour cream), 7 Layer Burrito (minus cheese and sour cream).



1} Tex-Mex Casserole



Ingredients:

1 onion chopped

1/2 green pepper + 1/2 red bell pepper chopped

1 can Mexican Style Rotel tomatoes

1 can whole kernel corn

1 can red beans

1 can olives, sliced - save a few for the topping at the end

1/2 cup white rice + 3/4 cups water

1 teaspoon paprika + 1 teaspoon chili powder + 1 bouillon cube

garlic crushed

1 package Boca burger patties, chopped

cheese substitute



Directions:

Saute onion and peppers in a little oil. when tender add tomatoes, undrained, corn, red beans, olives, rice, water, paprika, chili powder, boullion, garlic. Simmer till rice is almost tender.



Pour rice mixture into a casserole dish and toss with chopped Boca patties and cheese. Top with sliced olives and extra vegan cheese. Cover and bake at 350 F until done.



2} Vegetable Fajitas



Ingredients:

rice

tortillas

1 medium onion

1 small bell pepper (green, red or yellow)

2 carrots, peeled and julienned

1 cup cauliflower

1 cup brocolli

1 small zuchinni

1-2 tablespoon sesame oil

1 teaspoon parsley

1 teaspoon oregano

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper

salsa



Directions:

Preparation time: 20-45 minutes, depending on what type of rice you use. Cook 1 cup of rice according to package directions. In a wok, heat sesame oil.  (You can substitute vegetable oil.) Cook onions and peppers until start getting soft.  Add carrots and cauliflower.  Sprinkle spices over top of vegetables.  Stir with spatula.  After one minute, add brocolli and zuchini and 2 Tbs. water.  Cover wok so brocolli and zuchinni will steam for 3 minutes.  Remove lid and stir in order to get spices evenly distributed.  Cover for another minute or so. Put serving spoonful of rice and of vegetables into tortilla.  Add salsa to taste.

I think the 80% of mexican food, could be replaced the meat for soy meat.



For example i did veg picadillo, because my uncles are veg, and i was hungry hahaha.



Cut a potato in med-small squares, then fry them.



For the meat, put water to the soymeat, then take off the water, and smash until they get dry again and looks like meat.

Then fry the meat adding salt, pepper and oregan.



For the sauce, in the blender, add like 3 tomatoes, half onion, one jalapeno chili, oregan, salt, one galic teeth, and pepper.



Then put all in a pan, and put it top, and leave it to low fire like 15 mins.



And i can't found the difference within soymeat and cowmeat, hahaha,
